Relish, Meyer Lemon (P, TNT)

Yield: 1-1/4 cups

1 Meyer lemon or regular lemon
4 tablespoons chopped shallots
1/4 cup rice vinegar
1/2 cup olive oil
Salt and ground pepper to taste

Wash the lemon and trim of the ends. Cut the lemon in eight wedges, remove all seeds and then slice very thinly.

Mix the sliced lemon, diced shallots, oil and vinegar and finish with a few grinds of black pepper. Amazing over Salmon (click here for recipe)
