Turkey Breast, Sweet 'n' Tangy (M)

Serves: varies with size

Salt, pepper and paprika, to taste
3/4 cup apricot jelly OR orange marmalade
3/4 cup orange juice
2 tablespoon lemon juice
1 teaspoon ginger
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon cumin and/or 1 teaspoon dried red pepper flakes (optional)
1 cup chopped onion
2 cups sliced mushrooms (optional)
2 cups chopped onions (optional)
1 cup sliced celery (optional)
1 to 2 cloves minced garlic (optional)
1 bay leaf (optional)

Preheat the oven to 400°F.

Rub the turkey breast with salt, pepper, and paprika.

Mix the jelly, juices and remaining spices in a bowl.

If using vegetables, sprinkle them on the bottom of a baking dish. Place the turkey in baking dish and pour the glaze over. Bake for 20 minutes uncovered. Lower the oven temperature to 325°F and bake covered with foil for 45 minutes. Check with a meat thermometer. If the turkey breast has not reached 170°F, continue baking uncovered.

While the turkey is baking spoon the glaze mixture over the turkey to moisten, about every 1/2 hour.
