Pasta w/Turkey Bolognese (M, TNT)

Serves: 5

2 tablespoons oil
1 small green pepper, chopped
1 onion, finely chopped
1 stalk celery, finely chopped
1 clove garlic, minced
1 pound ground turkey
1 28-ounce can tomatoes OR fresh tomatoes, chopped and 8-oz. can tomato sauce
1 6-ounce can tomato paste
1 teaspoon salt
Oregano
3 tablespoons dry wine
8 ounces wagon wheels (or shell pasta)

In 12" skillet on medium heat, Sauté pepper, onion, and celery in oil. When tender, remove from pan with slotted spoon.

Cook turkey in the pan until pan juices evaporate and turkey is well browned, stirring frequently.

Return vegetables to skillet. Stir in tomatoes with their liquid, tomato paste, wine, salt and oregano. Simmer uncovered 15 minutes to blend flavors.

Prepare pasta. Drain. Toss with meat.

Poster's Notes:
For those of you who prefer ground beef, this recipe works well that way too.
