Meatballs, Sweet and Sour I (M, TNT)
Source: A caterer gave it to me
Serves: Approximately 50-60

Meat Mixture:
1/2 cup rice, not minute rice
5 pounds or turkey
2 eggs
1/4 cup dark brown sugar
3 tablespoons real lemon juice

Sauce:
3 large cans of tomato sauce
1-1/2 cans water
1 cup dark brown sugar
1/2 cup real lemon juice

Cook rice until almost soft. Drain and pour cold over rice to stop it cooking. Drain well.

Mix rice with meat mixture.

Pour sauce in a pan and let it come to a boil. Make balls out of the meat mixture. When the sauce comes to a boil add the meat balls to it. Cook on top of the stove for 1-1/2 hours stirring as so it does not burn.

We usually served it over baked potatoes with a salad. Freeze in batches for other meals. Make sure there is enough sauce in the containers for the next meals.

Poster's Notes:
This meatballs recipe was the meat that went into my stuffed cabbage and the recipe was given to me by a caterer about twenty years. Both the meatball and the stuffed cabbage is a TRIED and TRUE delicious recipe.

As for the amount, well we stuffed a large head of cabbage for the stuffed cabbage and if any meat was left over we made little meat balls and put them in the sauce and cooked it with the stuffed cabbage. Some of the family did not like cabbage so we just made the meatballs without stuffing the cabbage.
