Stuffing Pie (D, TNT)

10" unbaked pie shell
2 tablespoons oil
2 tablespoons water
1 large onion, chopped fine
2 cups cooked brown rice
2 cups milk
1 teaspoon salt
4 tablespoons minced fresh parsley
2 teaspoons onion powder
1 cup cashew pieces, rinsed
4 slices whole wheat bread, crumbled
2 tablespoons soy sauce
1/2 teaspoon dried thyme
1/2 teaspoon celery seed
1/2 teaspoon ground sage

Gravy:
1-1/2 cups warm water, divided
1/ 2 cup cashew pieces, rinsed
1 tablespoon onion powder
3 tablespoons soy sauce
1/4 teaspoon garlic powder
Salt to taste

Preheat oven to 350°F.

Heat the oil and water together in a pan and cook the onions until soft and translucent. Combine remaining filling ingredients in a large bowl and mix well. Stir in cooked onions and mix well. Adjust seasoning if necessary. Spoon mixture into pie shell and bake in a preheated 350°F oven for an hour. Serve with gravy.

To prepare the gravy, in a blender or food processor, place 1/2 cup of the warm water with the remaining gravy ingredients. When mixture is creamy, blend in the rest of the water. Pour gravy into a pan and cook over medium heat until thick. Stir constantly, adjust seasonings.
