Matzo Stuffing (P, KLP, TNT)

8 squares of matzo, broken
Boiled water to cover the matzo
1 very large or 2 large onions, diced and fried
2 to 3 eggs
Salt, pepper, garlic powder, paprika, to taste

Break up the matzot into approximately 1" pieces. Cover with boiled water that has cooled, but still very warm, until the matzo softens. Drain.

Add fried onions, two eggs and seasonings. Combine. If it is not wet enough add the third egg.

Poster's Notes:
This is the stuffing I use for veal and for turkey. My family loves it. I never use bread stuffing.
