Chicken, Shabbat in a Pot (M, TNT)

Serves: 4 to 6

Oil to cover pan
1 onion, diced
1 carrot, diced
1 zucchini, diced
3 to 5 cloves garlic, minced
Sesame seeds (optional)
1 cup brown rice or white rice
1 chicken cut in serving pieces
1/4 cup tomato paste
1-3/4 cup water
1 tbsp. soy sauce
Salt to taste

In a large frying pan, sauté onion, carrot, zucchini, garlic, and sesame seeds in oil until soft. Add rice.

Place chicken on top of rice mixture and pour liquid over it. Bring to a boil and cover. Lower heat. Simmer 45 minutes or until liquid is absorbed.

Poster's Notes:
It's fast and easy and can be put on the blech (Shabbos hot plate) just before Shabbos and served Friday night. I don't think it would last overnight.
