Jamaican Jerk Chicken Loaf (M)

Serves: 6

1-1/2 pounds ground chicken or turkey
1 cup cooked white rice
1 cup canned black beans, rinsed and drained
1 cup thinly sliced scallions
1/2 cup firm white bread crumbs, pareve
2 tablespoons lime juice
1 tablespoon jalapeno peppers, seeded and minced
3 cloves minced garlic
2 teaspoons grated lime peel
2 tablespoons chopped fresh thyme or 2 tsp dried
2 tablespoons chopped fresh sage or 2 tsp dried
1 teaspoon salt
3/4 teaspoon ground allspice
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
1 egg
3 tablespoons jalapeno jelly, optional but adds much flavor

Pre-heat oven to 350°F.

In a large bowl, with your immaculately clean hands, combine gently but thoroughly all of the ingredients except the jalapeno jelly.

In a 9"x13" pan shape the mixture into a loaf or pat it into a 9"x5" loaf pan. If using the jalapeno jelly, heat it or microwave it until melted, and spread it on top of the loaf.

Bake about 1 hour until the loaf is firm or until a meat thermometer registers 160°F. Let loaf stand about 10 minutes before slicing.
