Chicken, World's Fair (M, KLP, TNT)

Serves: 4-6 servings (easily doubled and tripled)

2 broiler-fryers (2 to 2-1/2 pounds each) cut in half lengthwise (or pieces)
2 tablespoons margarine
Salt and pepper to taste
1-1/4 cups orange juice
1/2 cup raisins or currants
1/4 cup chopped chutney (i.e. mango or ginger)
1/2 cup blanched, sliced almonds
1/2 to 1 teaspoon cinnamon
1/2 to 1 teaspoon KLP curry powder
Dash of thyme

Arrange chicken halves in a greased, shallow 9"x13"x3" baking dish or broiler pan. Dot with margarine, salt and pepper. Bake in 425°F oven for 15 to 20 minutes or until golden brown.

In a saucepan, combine orange juice, raisins, chutney, almonds, cinnamon, curry, and thyme. Simmer for 10 minutes. Pour sauce over browned chicken. Bake in a 350°F oven for 1 hour or until chicken is tender.

Garnish (optional) with mandarin oranges, sliced bananas, parsley and serve with condiments such as sliced green onions, coconut chips, preserved ginger slices, and banana chips.
