s Chicken Stir-Fry w/Bananas (M)

Serves: 6 to 8

4 whole chicken breasts, cut in half, boned and skinned
2 tbsp. margarine
3 cups broccoli flowerets
1/4 cup onion, chopped
1 tbsp. soy sauce
1 tsp. salt (I'd omit)
1/2 tsp. dried basil
1/8 tsp. pepper
1/8 tsp. ginger powder
1/8 tsp. cardamom
2 tomatoes, cut in wedges
4 bananas

Cut each breast half into 10 to 12 thin strips.

Melt margarine in large skillet or wok; add chicken, broccoli and onion; cook until chicken is white and onion is tender.

Add soy sauce, spices and tomatoes; cover and cook over medium heat for 5 minutes.

Peel bananas, but into 1" diagonal slices, and add to skillet; cover and cook about 1 minute (just until bananas are heated). Serve over rice or noodles.
