Spanish Chicken (M, TNT)

Serves: 4

1 lb. skinless, boneless chicken breasts
3 green onions, chopped (I use more-about 6-8)
1 tomato, chopped
1 can (4 oz.) diced green chiles (you could use fresh chiles)
1/4 tsp. salt
1/8 tsp. cumin
1/8 tsp. pepper

Preheat oven to 350°F.

Spray an 8"x8" pan with non stick cooking spray. Arrange chicken in the pan. Top with remaining ingredients. Bake uncovered for 25-35 minutes or until chicken is done.

Poster's Notes: On this one I usually mix all the dry spices together then sprinkle in the chicken. Then I spoon on the tomato, chile, and green onion mixture. I also usually serve this with Spanish Rice and beans.
