Chicken, Pistachio Crust (M, KLP, TNT)
Source: I saw some guy on Food TV doing something similar to fish, but I didn't have any fish.
Serves: 4 to 6

1 chicken cut in 8 pieces OR 2 split breasts and 2 leg quarters, separated
1 cup shelled unsalted pistachio nuts
2 shallots, diced
1/4 cup bread crumbs or matzo meal
Olive oil
Garlic powder

Preheat oven to 350°F.

Put the pistachios in a Ziploc bag and whack it with something heavy--a rolling pin, a small child, the cat, your head--until the nuts are broken up very finely with some larger pieces surviving.

Heat 4 tbsp. olive oil in a skillet, add the diced shallots and sauté for 2-3 minutes until fragrant. Sprinkle with garlic powder to taste, stir. Add the pistachios and stir until well-coated. Reduce heat and cook for a minute or two. Mix in the bread crumbs. The mixture should be damp, with just a trace of oil not absorbed. If it's too dry, add a bit more oil. Remove from heat.

Arrange the chicken pieces in a baking dish. Spoon on the nut mixture liberally, pressing it on to the chicken to make a crust. Bake uncovered for 1 hour.
