Chicken Loaf I (M)

Serves: 4

2-1/2 pounds dark & light meat chicken or turkey, coarsely ground
1 cup chopped onion
2 tablespoons chopped garlic
1/2 cup chopped celery
1/2 cup green peppers
2 tablespoons finely chopped parsley
1 egg
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
3/4 teaspoon cayenne
1 teaspoon Worcestershire sauce
1 dash hot pepper sauce
1 cup fine dried bread crumbs (pareve)

Pre-heat oven to 350°F.

In a large bowl mix all ingredients with your hands, lightly but thoroughly. On a baking sheet lined with aluminum foil, mold mixture into a loaf about 5"x10".

Bake for 1 hour or until juices run clear. Let stand 10 minutes before slicing.

Emeril serves this on toasted French bread with mashed potatoes and gravy.
