Chicken, Hawaiian III (M, TNT)

Serves: 4

1 chicken cut in serving pieces, washed and dried
1/2 cup flour
1 tsp. salt
1/4 tsp. pepper
8 tbsp. margarine
1/4 cup honey
1/4 cup lemon juice
1 tbsp. soy sauce
1 6-ounce can pineapple chunks, drained
Blanched, toasted almond slivers

Pre-heat oven to 350°F.

Shake the chicken in a paper bag with the flour, salt and pepper, coating well.

Melt 4 tbsp. margarine in a lasagna-type baking pan.

Roll each chicken piece in the margarine and place skin side down in a single layer in the baking dish. Bake for 30 minutes.

Melt the remaining 4 tbsp. margarine in a small saucepan and stir in the honey, lemon juice, and soy sauce.

Turn the chicken pieces and pour the honey and margarine mixture over the chicken pieces. Bake an additional 30 minutes basting several times with the pan juices until tender and glazed. Add the pineapple chunks and the almonds and bake a few minutes longer to heat the pineapple.
