Chicken Breast Casserole (M, KLP, TNT)

3 pounds boneless, skinless chicken breast halves
2 cups fat-free chicken broth
1/4 pound mushrooms
1 bay leaf
1 onion, sliced
2 carrots, sliced
1 cup chopped celery
1-1/2 teaspoons salt
1/2 teaspoon pepper
2-1/2 tablespoons chopped parsley
1/2 teaspoon thyme
1/4 teaspoon marjoram

Preheat oven to 350°F. Put chicken in a 2-quart casserole dish.

Mix together all remaining ingredients. Pour over chicken. Bake, covered, 1-1/2 hours, until chicken is tender.

Doubles easily.
