Lemon Meringue Pie II (P, TNT)
Source: My mother's friend
Yield: 2 9" pies or 1 9"x13" pie

Crust:
3 cups flour
2 tablespoons sugar
1 cup oil
6 tablespoons (1/2 cup) orange juice

Filling:
14 tablespoons cornstarch
2 cups sugar
Pinch salt
3 cups hot water
6 eggs, separated
Juice of 3 lemons
Rind of 2 lemons

Make Crust:
Mix ingredients very well and pat down in pan either two round or one 9"x13" pans. Bake for 10 to 15 minutes at 350°F.

Make Filling and Assembly:
Beat egg whites with 6 tablespoons sugar for meringue.

Beat yolks.

Put in double boiler or on low fire: hot water, remaining sugar, cornstarch, lemon juice and rind, and when it's thick add it to the yolks slowly, stirring. Spoon into crust.

Put meringue on top and bake for 10 minutes at 350°F.
