Strudels, Apple (Dessert Lumpia) (P, TNT)

10 egg roll wrappers
2 firm apples (I used Granny Smiths)
1/3 cup flour
1/2 cup brown sugar
1-1/2 teaspoon cinnamon, divided
1/2 teaspoon nutmeg
1/4 cup sugar
1 tablespoon flour
1 egg white

Mix together flour, brown sugar, 1/2 teaspoon cinnamon, and nutmeg in a medium size bowl. Set aside.

Peel and core apples. Cut into halves. Run through the shredder blade of a food processor.

Drain any liquid from apples then place in bowl with dry ingredients. Mix well. Filling should be fairly dry.

Roll up filling with completely defrosted egg roll wrappers (uncooked side up). Seal end with paste.

Deep Fry: 375°F in 2" of oil.

Place on paper towels. Sprinkle with sugar and remaining cinnamon.

Poster's Notes:
Last night I made lumpia, a kind of Filipino eggroll. I ended up with more wrappers than filling so I tried to think of a dessert type filling for the remainder and ended up using an apple pie filling. They turned out pretty good.
