Rugelach III (P, TNT)
Source: "The Spice and Spirit of Kosher-Jewish Cooking," (by the Lubavitch Women's Organization)
Yield: 3-4 dozen

Dough:
5 cups flour
4 eggs, beaten
1 cup oil
1 cup orange juice
1/2 cup sugar
2 tsp. vanilla
4 tsp. baking powder
1 tsp. baking soda

For filling mix together:
1/2-3/4 cup walnuts, chopped fine
1/2-3/4 cup raisins
sugar
cinnamon
2 tbsp. orange or lemon juice, for moistness

Combine all ingredients for the dough, mixing well.

Refrigerate at least one hour, or overnight.

Roll out dough into several large circles, approximately 1/8" thick, and spread filling on top.

Cut into 6-12 triangles, depending on how large you want the rugelach to be. Then, working with each triangle separately, roll it from the wide outside inward, forming a crescent. (This is like rolling Pillsbury Crescent Rolls, although I'm not sure they're kosher so forget I mentioned them...)

Place on lightly greased cookie sheet and bake at 350°F approximately 30-45 minutes, until slightly browned.
