Hasenblusen (P, TNT)
Source: My ex-sister-in-law back in the 1970s
Yield: Makes a large bowl of pastry, enough for 10 to 12 people to nosh on

2 eggs
1 tablespoon of sugar
3/4 cup of flour
1 teaspoon baking powder (optional)

Combine ingredients, adding more flour if necessary. ( I've never used the baking powder in it.) Cover mixture.

Cut small amount at a time. Roll out as thin as possible. Cut into rectangles or various shapes (about 1" across) they change shape as they fry so don't be concerned about how to cut them.

Drop in hot oil in frying pan until light brown. Drain thoroughly. When ready to serve sprinkle with confectioners' sugar.

I've been making these for 38 years and this recipe makes quite a large bowl of pastry.
