Butter Horns, Old World (D, TNT)

4 cups flour
1/2 tsp. salt
1 oz. fresh yeast
1-1/4 cups butter
3 egg yolks, slightly beaten
1/2 cup sour cream
1 tsp. vanilla
Confectioners' sugar

Nut Filling:
1 cup sugar
3 egg whites, beaten stiff
1 cup chopped nuts (walnuts or pecans)
1 tsp. vanilla

Sift flour and salt. Crumble yeast into flour. Cut in butter as for a piecrust. Add egg yolks, sour cream, and vanilla. Mix thoroughly.

Divide dough into 6 parts. Dredge pastry cloth with confectioners' sugar and roll each section into a 9" round. Cut each round into 8 wedges. Spread 1 tsp. (full) filling on each and roll to center. Place on greased cookie sheets, bake at 400°F, 15 to 20 minutes, and remove onto racks as soon as rolls are taken from the oven.

Nut filling:
Beat sugar into whites gradually about 2 tablespoons at a time using mixer. Fold in nuts and vanilla.
