Ramen w/Surimi (P, TNT)

Serves: 4 to 5

3 cups water
2 3-ounce packets Oriental-flavor ramen noodles
1 1-pound packet frozen mixed vegetables
1 12-to-16-ounce package surimi (mock shrimp, crab, sea legs)

Bring water to a boil in a 2-quart pot.

Add both packets of ramen noodles. Turn down heat to simmer. Allow noodles to sit for 2 minutes. Add 1 of the seasoning packets and stir to combine. Save the other for seasoning at the table if you wish.

Add the frozen vegetables, cover, and simmer for 6 minutes. Break up surimi into bite-sized pieces, and add to the pot. Cover and simmer 1 to 3 more minutes until surimi is warm.

Poster's Notes:
We like the broccoli, cauliflower, and carrot mix for the mixed vegetables.

A 1-pot meal. Great for kids and young adults who don't mind all the salt in the seasoning packets.
