Parmesan Wafers (D, KLP, TNT)

Yield: About 2 dozen

1-1/2 cup coarsely grated mix of Parmesan and Romano cheeses
Silpat liner or piece of parchment baking paper

Preheat oven to 350°F.

Make 4 piles of cheese, one in each corner of pan. Bake 8 to 10 minutes until cheese melts and forms wafer. Immediately remove to rack to cool and make another batch of 4. Will keep for a day or 2 with paper in between them.

Original recipe called for mixing in a tbsp. flour which I didn't bother to do!
