Mandlen I (Soup Nuts) (P, KLP, TNT)

3 eggs
2/3 cup matzo cake meal
1 teaspoon potato flour (starch)
1/2 teaspoon salt
1 tablespoon water
2 tablespoons sugar

Mix until smooth and divide in 3 parts. Roll 1/4" thick then cut in strips, then in small squares. If they are somewhat sticky, drop into a little potato starch and then into a colander to shake off the excess.

Fry in heated vegetable oil (375°F) until golden.

Poster's Notes:
Most of the mandlen recipes don't include sugar but my grandma did and so I much prefer that addition.
