Sweetened Condensed Milk Substitute (P, TNT)

Yield: Approximately 1 cup

1 cup instant powdered soy milk
1/3 cup boiling water
1/2 cup sucanat (sugar)
1 tbsp. margarine

Mix milk powder and sucanat in a bowl. In a small bowl, pour water over margarine until dissolved. Add to dry ingredients and blend with a mixer for 2 minutes or until smooth. Refrigerate overnight.

Keeps for a week in the fridge.

Poster's Notes:
I have only used this recipe in bar cookies. The note from the original recipe says "If you use in some recipes like Pumpkin Pie your pie will never get to the point where a knife inserted will come out clean. But it will firm up once it is out and cooled, so this does work, just not the way you are used to."
