Summer Squash Kugel (P, TNT)
Source: "A Garden of Eatin,'" B.S.B.I. sisterhood, Charleston, SC
Yield: An 11"x7" pan, about 15 pieces

3 lbs. yellow squash, unpeeled and chopped
2 cups chopped onion
2 oz. (1/2 stick) margarine
2 eggs, beaten
1/2 cup bread crumbs (toasted are good)
1 tsp. salt
1-1/2 tbsp. sugar
1/8 to 1/4 tsp. pepper
1 tsp. baking powder

Topping:
2 tbsp. margarine, melted
1/4 cup bread crumbs

Boil squash and onions together in water until tender; drain and mash well.

Melt margarine in hot vegetables. Add remaining ingredients and pour into a greased 11"x7" baking dish. Drizzle melted margarine on top and evenly sprinkle crumbs.

Bake at 375°F for 50 minutes until firm and top is browned and crispy.
