Noodle Kugel, Pineapple IV (D, TNT)

Serves: 8

12 oz. package medium noodles (or homemade)
1 cup cottage cheese
1/2 cup sour cream (light or regular)
4 eggs (or 2 eggs plus 4 egg whites)
1/4 cup sugar (or to taste)
1/2 cup raisins
14 oz. can crushed pineapple, well-drained
To serve: sour cream or Sour Cream Substitute, Dairy (click here for recipe)

Prepare noodles according to package directions. Drain and rinse well. Return noodles to saucepan. Combine with remaining ingredients and mix well. Place in a sprayed 7"x11" glass baking dish.

Bake in a preheated 375°F oven for 45 minutes, until golden. Serve hot with sour cream or Almost Sour Cream.

Freezes well.

Poster's Notes:
I must share this wonderful story with you. My mother was visiting me from Winnipeg in September for the high holidays and she decided to make her own lokshen. She made me take my pasta maker out of storage and move it to an easy-to-access corner. She proceeded to make the pasta dough in the food processor.

I left the kitchen for a few minutes, and when I came back, sheets of homemade pasta were hanging from the handle of my oven door, like dishtowels that you hang to dry! My mother really knows how to use her noodle! (I still haven't made my own lokshen since she left, but I definitely will because they are really good.)
