Challah Kugel, Sweet (D/P, TNT)
Source: "The Balabusta's Choice Kosher Cookbook"
Serves: 8 to 10

5 eggs
3/4 cup sugar
1 package instant vanilla pudding
1/4 cup coffee whitener or milk
3/4 cup oil
2 packets vanilla sugar
1 medium challah, soaked and squeezed
Cinnamon and sugar mixture (optional)

Preheat oven to 375°F.

Mix the first 6 ingredients until smooth.

Cut challah into small pieces and combine with mixture. Pour mixture into lined (parchment paper) deep 9"x5" baking pan.

Mix cinnamon with sugar and sprinkle over kugel. Bake for 1 hour.

Poster's Notes:
I used 1/2 cup of sugar, not 3/4.

For the instant vanilla pudding, I used small size package.

For the coffee whitener, I used milk.

For the oil, I only used 1/2 cup.

I used 2 tsp. vanilla extract instead of vanilla sugar.

I used 1/2 tsp. cinnamon and 1 tbsp. sugar

This is a wonderful recipe to use leftover bread. It's like a bread pudding, only uses challah.
