Barley Kugel, Apple (D)

Serves: 10-12

8 oz. plain yogurt (low-fat may be used)
1 cup low-fat cottage cheese
3/4 cup egg substitute or 6 egg whites
1/4 cup light corn syrup
1 tsp. vanilla
1 tsp. cinnamon
3 cups cooked barley
1-1/2 cups finely chopped apples
1 cup raisins
2 tbsp. sugar

In large bowl combine yogurt, cottage cheese, egg substitute, corn syrup, vanilla and 1/2 tsp. cinnamon; mix well.

Stir in barley, apples and raisins; mix well.

Spread into greased 11"x7" baking dish.

Sprinkle evenly with combined sugar and remaining 1/2 tsp. cinnamon. Bake in a 350°F oven about 35 minutes or until edges are set and knife inserted in center comes out clean. Let stand 30 minutes. Serve warm or cold. Store covered in refrigerator.
