Acorn Squash Kugel (P, TNT)

Serves: 9 to 12

3 small acorn squash
3 eggs
3/4 stick (3 oz.) margarine
1/2 cup pareve milk
3/4 cup flour
3/4 cup sugar
Dash of nutmeg, vanilla, or cinnamon, optional

Cut squash in half and place in a pan with about 1" of water. Cover and bake at 350°F until shell can be pieced with a fork. The squash can also be cooked in a microwave oven.

Cool and scoop out the squash into a bowl. Add other ingredients and bake in an 8" square pan at 350°F for about 30 to 45 minutes.

Poster's Notes:
I use less margarine and less sugar. As for the optional ingredients, I added a bit of cinnamon and some almond extract.
