Vegetable Kugel III (P, KLP, TNT)

Serves: 6 to 8

6 tablespoons margarine
1 cup chopped onion
1-1/2 cups grated carrots
3 eggs
1 lb. frozen chopped spinach, thawed and drained
1/2 cup chopped celery
1/2 cup chopped mushrooms
3/4 cup matzo meal
Salt and pepper to taste

Sauté onions, celery, and mushrooms in margarine for 10 minutes. Add remaining ingredients.

Pour mixture into large, greased loaf pan. Bake at 350°F for 45 minutes until firm. Allow to cool 15 minuets, remove from pan.

Can double.
