Potato Kugel, O'Brien (P, KLP, TNT)
Source: "Tastes of Jewish Tradition," by Hirsh et al.
Serves: 12 to 16

1 box Manischewitz Stuff-It Mix
2 large packages frozen hash brown potatoes
1 large package frozen chopped onions (or 4 large fresh onions)
Vegetable oil for frying
1 lb. fresh mushrooms sliced (optional)
1 red pepper, green pepper or both, sliced (optional)

Preheat oven to 375°F.

Sauté potatoes, onions, mushrooms, and peppers until golden brown.

Prepare Stuff-It mix as directed on package. Place potatoes on the bottom of shallow roasting pan with mix on top. Sprinkle salt and pepper to taste. Bake for 1 hour at 375°F. May be baked in 2 3-quart round casserole dishes. Use same time and temperature as above.

Poster's Notes:
This is from a wonderful book I highly recommend called "Tastes of Jewish Tradition." The book is great if you have children or grandchildren in your life, but it really is fun for all ages. It's not just a recipe book but is full of games and holiday projects and stories as well as fascinating facts and history about every holiday. I can't wait to try some of the suggestions for our Seder this year with my three-year old granddaughter attending, but all the adults will enjoy it too!
