Potato Kugel V (M/P, KLP, TNT)

Serves: 6

5 medium potatoes, cubed
1 large onion, diced
3 eggs
1-1/2 teaspoons salt, (optional)
1/4 teaspoon black pepper
1/4 cup schmaltz, or margarine
1/3 cup flour (use matzo meal for Pesach)

Blend all ingredients until potatoes are medium zapped. You may like it finer, we like it a bit coarse. I zap it in short bursts until I get the consistency I want.

Pour into preheated, lightly-oiled 9" round or loaf pan and bake at 350°F or until golden brown, about 1-1/2-2 hours. When doubling recipe use 9"x13" pan.

Poster's Notes:
You can probably cut way down on the fat, but don't omit it all together. Use low-fat margarine and heavily PAM the pan.
