Broccoli and Corn Kugel (P, TNT)
Source: Adapted from several in my files
Serves: 10

2 cans creamed corn
1 large bunch broccoli, cooked and chopped coarsely
2 eggs
1 cup soft bread crumbs, (from 2 slices of bread)
2 tbsp. minced onion
1/4 tsp. pepper
4 tbsp. cornflake crumbs, or cracker crumbs or wheat germ
Vegetable cooking spray

Mix together all but last two ingredients in a sprayed casserole dish or baking pan. Top with cornflake crumbs, spray with cooking spray.

Bake at 350°F for 40 minutes or until browned.

Here is an interesting side dish that I made for Shabbat dinner last week. It was a big hit.
