Jam, Plum (P, TNT)

Yield: 3-4 pint jars

1/2 cup fresh orange juice
1/4 cup fresh lemon juice
2 pounds plums - halved, pitted, cut into 1/2" thick slices
1 cinnamon stick
3-1/2 cups sugar

Combine fresh orange juice and lemon juices in heavy large saucepan and bring juices to boil.

Add sliced plums and cinnamon stick. Cover mixture and bring to a boil.

Reduce heat and simmer covered until plums are very tender, stirring occasionally, about 14 minutes. Add sugar and stir until sugar is dissolved. Simmer uncovered until plum mixture reaches gelling stage, crushing fruit with back of spoon and stirring occasionally, about 1 hour.

Discard cinnamon stick. Spoon plum preserves into jars, process in water bath.

Poster's Notes:
If you are impatient, like I usually am, add a box of pectin to speed the gelling process. I have made this many times, and it is delicious!
