Pears, Stewed in Mint (P, KLP, TNT)

6 large peeled pears
2 cups dry white wine
2 cups water
juice of 1 lemon
1 long peel strip from 1 lemon
1 vanilla pod cut in half
3/4 cup sugar
3 cloves buds
30 mint leaves

Place everything except pears and mint in a pot, bring to a boil and simmer 10 minutes.

Add the pears and cook half-covered over low heat for 20 minutes, until pears are tender but not mushy. Chill.

Put the pears in a big glass jar, add mint leaves and pour in the liquids. keep chilled for 2-3 days before serving.

Poster's Notes:
This a lovely dessert, easy to make in advance and in large quantities, and a jar on each table looks very grand. I'd imagine that when multiplying the number of pears needed you need only half as much of the liquid since there's a lot of it. I tripled the number of pears (small ones though) using 3 cups of wine and water, and 1 cup sugar.
