Salmon w/Wasabi Cream (D, KLP)

Serves: 4

Olive oil
1-3/4 lb. salmon fillet (wild king salmon preferred)
Sea salt
6 teaspoons wasabi powder
8 teaspoons water
1 cup sour cream

Preheat oven to 300°F.

Sprinkle a roasting pan (large enough to fit the salmon) with olive oil. Lay the salmon in the pan skin-side down. Rub a thin slick of oil over the salmon and season with salt. Roast until just cooked through, 20-30 minutes.

Meanwhile, dissolve the wasabi powder in the water. Whisk into sour cream and season to taste with salt. Add more wasabi, if desired. Serve with the salmon.

Poster's Notes:
This sounds good, but I'm thinking of substituting drained yogurt for the sour cream, which is too rich for my tastes (anymore).
