Salmon, Sesame I (P, TNT)

Serves: 4

4 salmon fillets (about 1-1/2 lbs.)
Juice of 1/2 lemon (or 1 tbsp. rice vinegar)
2 tbsp. light soy sauce
1 tbsp. maple syrup or honey
1 tsp. Oriental sesame oil
2 cloves garlic, crushed
1 tbsp. grated ginger
Paprika
1 tbsp. sesame seeds

Place salmon in baking dish sprayed with non-stick spray or lined with parchment paper. Sprinkle with lemon juice or vinegar. Combine remaining ingredients except seeds and rub over salmon. Let marinate 20 to 30 minutes.

Meanwhile, preheat oven to 425°F.

Sprinkle salmon lightly with sesame seeds. Bake uncovered 12 to 15 minutes (or microwave covered on HIGH 6 to 8 minutes), until fish flakes when lightly pressed. Leftovers can be broken into chunks and added to salad greens or pasta.
