Salmon, Seared w/Mustard Crust (P, TNT)

Serves: 6

2 tablespoons olive oil
2 tablespoons sugar
2 tablespoons mustard powder, heaping
6 7-ounce each salmon fillets, skinless

Heat oven to 400°F. Have ready a rimmed baking sheet.

Heat 1 tbsp. oil in a large skillet over medium heat. Mix 1 tbsp. sugar and 1/2 the dry mustard on a plate. Dip in half the fish, coating both sides. Add to pan and cook. You want to hear the pan sizzle, 2 minutes per side or until golden brown (coating may get a bit charred).

Transfer to baking sheet. Repeat with rest of oil, fish, mustard and sugar.

Bake 6 to 8 minutes until salmon is burnished brown outside and a juicy coral inside. Remember, it will continue to cook after it comes out of the oven.

Poster's Notes:
I found that I needed more than 2 tbsp. sugar and mustard. So, I just kept the 1:1 ratio and made more of the coating.
