Halibut, Spicy (P, TNT)

Serves: 4 to 6

4 big frozen halibut steaks, cut in half, and soaked with some lemon juice while preparing the sauce
2 tbsp. olive oil
2 medium onions, sliced
6 big garlic, chopped
1 medium green bell pepper, sliced
1 cup crushed tomatoes
2 tbsp. tomato paste
1 cup water
1 tbsp. vinegar
Pinch sugar
1 tsp. cumin
1/2 tsp. baharat (aka English pepper, aka allspice)
Salt and freshly ground black pepper
Optional: hot pepper can be added to the dish

In a wide saucepan heat the oil. Sauté the onions with a covered saucepan for about 10 minutes, until the onions have a light gold color.

Add the bell pepper and garlic, mix and continue to cook without the lid for another 5 minutes.

Add the crushed tomatoes and tomato paste, mix well, add the water and the rest of the ingredients except the fish.

Taste if you need to add more salt.

Cover, and simmer for just another 5 minutes.

Arrange the fish in one layer, and sprinkle some of the lemon on top. With a spoon, cover the fish with the sauce, bring to a boil, cover saucepan, and continue to simmer for another 30 minutes.

Serve with couscous, white rice, or mashed potatoes.
