Gefilte Fish, Sephardic (P, TNT)

Serves: 6 to 12

Fish:
1 Kg (2.2 lbs) carp, cod, or merloza (hake)
6 cloves garlic
1 onion
1 green pepper
1 green hot pepper
2 eggs
1 tsp. cumin
1 tsp. salt
1 tsp. pepper
3 tsp. parsley or coriander (cusbara)

Sauce:
4 cups tomato juice or 4 tbsp. tomato paste and 2 cups water
3 cloves garlic
2 tbsp. oil
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. pepper
Parsley, chopped

Combine all fish ingredients in the food processor. Prepare balls or patties and fry. If you are in a hurry, you can put them straight in the sauce.

For the sauce, fry garlic, then add the rest of the ingredients. Bring to a boil. Cook fish in one layer. Cover and cook 30 minutes. Uncover another 10 minutes.
