Fish Cakes II (D, TNT)
Source: Adapted from "Eat, Drink and Be Healthy"
Yield: 8 "crab" cakes

1 pound lump "crabmeat" (surimi)
1 egg  or 1/4 cup substitute
3/4 cup evaporated skim milk
1-1/4 cups dry bread crumbs
1/4 teaspoon cayenne pepper
3/4 teaspoon dry mustard
1 teaspoon seasoned salt
2 teaspoons Worcestershire sauce
1 tablespoon tub margarine, melted

Preheat oven on broil setting.

Carefully look over fish and remove bones. Combine all ingredients, except margarine mixing thoroughly.

Spray cookie sheet with vegetable cooking spray. Press fish mixture into 8 patties about 3/4" thick. Place on cookie sheet. Brush tops of cakes with melted margarine. Broil with oven door open, 5" from heat source, about 4 minutes on each side or until lightly browned.

Poster's Notes:
The recipe  originally calls for lump crabmeat. I have made it with imitation "crab," and it was delicious. And once I just heaped all the ingredients together and made it into a loaf. That was good too.
