Pudding, Bread w/Dried Fruit (D/P, TNT)

Serves: 8

2 cups dried fruit (slice bigger pieces)
300ml (10 oz.) apple juice
1 loaf white bread (I did it without crusts)
2 tsp. mixed spice (I used cinnamon, ginger and nutmeg)
2 large bananas sliced
300ml (10 oz.) milk (you can use rice, soy or almond milk to make the dish pareve)
2 tbsp. brown sugar (I used a bit more)
Natural yogurt to serve (Don't skip this, it goes really well)

Preheat oven to 200°C (400°F). Put fruit and juice in a small pan and bring to the boil.

Remove from heat and stir in bread, spices, and banana. Spoon into shallow baking dish. Pour milk over and sprinkle sugar on top.

Bake until firm and golden (20-25 minutes). Serve hot or cold with yogurt.

Poster's Notes: A delicious old-fashioned family favourite is given a lighter, healthier touch in this one.
