Mousse, Strawberry II (P, KLP, TNT)

Yield: Approximately 3 cups

1 cup sugar
1 egg white
1 pint of strawberries, washed and hulled

Whip the egg white with the sugar and then add the strawberries. Continue beating for at least 15 minutes. The mousse will continue to add volume.

Poster's Notes:
When I freeze it, I use it as an "ice cream."

It can also be put in a pie shell and frozen to be used later.

For Passover I have used it as a frosting on a sponge cake.
