Ice Cream Pie, Coffee (P, TNT)
Source: Adapted from Rich Whip recipe
Serves: 8 to 10

Crust:
2-1/2 cups regular oatmeal
1-1/4 sticks margarine
1 cup brown sugar
1 cup ground walnuts
1 tsp. vanilla sugar OR vanilla extract

Filling:
1-1/2 cups chocolate chips
4 sticks margarine
8 eggs
4 cups confectionary sugar
3 tsp. coffee (I use instant coffee granules)
8 tsp. vanilla

Topping:
2 10-oz. containers pareve whipped topping (like Rich's Whip)
1 tbsp. confectioners' sugar
1 tsp. coffee (I use instant coffee granules)
1 tsp. vanilla

Make Crust:
Mix together oatmeal, brown sugar, margarine, vanilla sugar or vanilla and nuts, and bake for 10 minutes in 9"x13" pan, or until golden brown.

Make Filling:
Melt in top of double boiler the margarine and chocolate chips until smooth.

In a mixing bowl of electric mixer beat together eggs, confectioners' sugar, coffee and vanilla. When chocolate mixture is melted combine with egg mixture on medium to low speed so mixture doesn't splatter. Pour over oatmeal crust and freeze.

Make Topping and Assembly:
When chocolate mixture is frozen, make topping from whip. Beat until whip holds stiff peaks and slowly add coffee, confectioners' sugar and vanilla. Spread topping over frozen mixture and return to freezer until frozen.

To serve cut into squares.

Poster's Notes:
I have made this delicious dessert for my family for Purim, Succot, and other occasions. I also made it recently for my son's Bivarfin and now I'm making it for a friend's Sheva Brachas. I have dubbed this recipe "The zillion calorie recipe" because you gain ten pounds by reading it, another ten for making it and when you eat it? Well, its well worth the expense!
