Ice Cream, Cherry Garcia (D, KLP)
Source: Ben and Jerry's Homemade Ice Cream and Dessert Book
Yield: 1 grateful quart

1/4 cup plain chocolate, shaved
1/4 cup fresh Bing cherries, halved and pitted or canned, drained
2 large eggs
3/4 cup sugar
2 cups heavy or whipping cream
1 cup milk

Place the shaved chocolate flakes and cherries in separate bowls.

Cover and refrigerate.

Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar a little at a time, then continue whisking until completely blended, approximately 1 minute more. Pour the cream and milk and whisk to blend.

Transfer mixture to an ice cream maker and freeze following manufacturer's instructions.

After the ice cream stiffens (about 2 minutes before it is done), add the chocolate and cherries, then continue freezing until the ice cream is ready.

While I'm on the subject of this almost 20-year-old Ben and Jerry's cookbook, I thought I should share this precious treasure as well (assuming everyone is as crazy for this flavor as I am).
