Clafouti, Cherry (D, TNT)

Serves: 6

4 whole eggs
1/2 cup sugar
pinch salt
1/3 cup flour
1 cup milk
1/4 cup sweet butter, melted
1 tsp. vanilla
1 tsp. lemon peel, grated
1 pound pitted dark sweet cherries
icing sugar
whipped cream, optional
French vanilla ice cream, optional

Preheat oven to 325°F. Grease 8"x8" Pyrex baking dish.

Whisk eggs, sugar and salt to blend. Whisk in flour. Add milk, butter, vanilla, lemon peel; whisk until smooth.

Arrange cherries in bottom of Pyrex baking dish. Spoon batter evenly over cherries.

Bake until center is set and top is golden (about 50 minutes). Cool completely. Sift icing sugar on top and serve with whipped cream and/or ice cream OR have plain on its own!

With cherry season around the corner, I came across this recipe in my file and thought I would share it - it is a breeze to prepare & makes you look like a genius in the kitchen! Not to mention the fact that one mouthful of this & you are in heaven. This dessert is a cross between a pudding and a pancake and is absolutely phenomenal!
