Cheesecake, Pareve Banana-Maple No Bake (P, TNT)

Serves: 8

Crust:
1 cup graham cracker crumbs
1/3 cup brown sugar
4 tablespoons margarine, softened

Filling:
1/3 cup orange juice
1 tablespoon plain gelatin powder
2 cups tofu, mashed
1 large ripe banana
2/3 cup maple syrup
1/2 teaspoon vanilla
2 to 3 tablespoons lemon or lime juice

Make Crust:
Pre-heat oven to 350°F.

Mix crust ingredients and press into a 9" pie plate. Bake for 8 to 10 minutes.

Make Filling and Assembly:
Pour the orange juice into the top of a double boiler. Sprinkle the unflavored gelatin over the top, and stir until the water in the bottom half of the cooker comes to a boil, and the gelatin granules are all dissolved.

Then, in the blender, mix the rest of the ingredients and the heated, dissolved gelatin. Blend the filling until it is smooth, then pour it into the cooled crust.

Refrigerate the pie for about 3 hours or until it develops a nice firm consistency.

Serve alone, or with fruit.

Poster's Notes:
I have not tried it with kosher jels. You might try it with a tablespoon or two of starch (corn, tapioca, potato, arrowroot) and a quarter cup of water until it thickens, then add some orange juice concentrate, defrosted, about another tablespoon and a half.
