Cheesecake, Pareve III (P, TNT)

Serves: 8 to 10 servings

Crust:
1-1/2 cups crushed vegan Graham crackers
1/4 cup (4 tbsp.) vegan margarine, melted
1 tbsp. Sucanat (an unrefined, granulated sweetener), or use sugar

Filling:
2 cups firm tofu (water packed), drained and crumbled
1 cup soft silken tofu, drained and crumbled
1/4 cup lemon juice
1/2 cup vegetable oil
1 cup Sucanat (or sugar)
1 tsp. vanilla extract
1/8 tsp. salt

Crust:
Mix together all ingredients for crust and press firmly around the sides and bottom of a 9" pie pan. Set aside.

Filling And Assembly:
Combine all ingredients for filling in a food processor or blender and process until smooth, stopping machine and stirring mixture as needed.

Pour into prepared crust and bake at 325°F for about 50 minutes, until firm in the center.

Cool thoroughly before slicing and serving. Top with fresh fruit if desired.
