White Chocolate Delight Cookies (D/P, TNT)
Source: "Gatherings: Creative Kosher Cooking from our Families to Yours" (Netivot Hatorah, Toronto)
Yield: 30 cookies

1 cup margarine, softened
1 cup sugar
1/2 cup brown sugar, packed
2 teaspoons vanilla
2 eggs
2-1/4 cup all-purpose flour
1 tsp. baking soda
1/4 teaspoon salt
1 cup white chocolate chips (pareve)

Preheat oven to 325°F.

In a large bowl, beat margarine, sugars, vanilla, and eggs until fluffy. Add flour, baking soda, and salt. Mix well.

Add chocolate chips. Mix until doughy in texture. Form dough into golf-size balls and place onto ungreased cookie sheet.

Bake 7 minutes or until bottom edges of cookies are golden brown. Cool. Store in airtight container.

Poster's Notes:
Dark brown sugar and light brown sugars are virtually interchangeable in recipes, but dark contains more molasses, which will give a deeper, spicier flavour.
