Potato Chip Cookies I (D)

Yield: about 60 cookies


1 cup butter
1/2 cup sugar
1 tsp. vanilla
2 cups flour
1/2 cup potato chips, crushed
1/2 cup chopped pecans

Cream together until light and fluffy, butter, sugar, and vanilla extract.

Blend in unbleached flour, crushed potato chips and chopped pecans.

Drop by teaspoons on an ungreased baking sheet 2" apart. Flatten with a greased and sugared glass bottom.

Bake in a preheated 350°F oven for 10 to 12 minutes.

Poster's Notes: I was looking for a different recipe that I used to have in the Los Angeles Times cookbook, but my copy of the book fell victim to a dishwasher overflow a few years ago and I don't have it anymore. The recipe was for something called Beatles, which were potato chip cookies with chocolate chips. This is close, but without the chocolate chips. (I suppose they could be added, or substituted for the pecans.)

BTW, the origin of the recipe I was looking for was the LA Public school nutrition department during the mid-1960s (which may explain why they were called Beatles.) If anyone has that recipe, please share because I'd love to have it again. In the meantime, here is the recipe for potato chip/pecan cookies I was able to find.
